Crackling Cornbread
¾ cup yellow cornmeal
¾ cup all-purpose flour
¼ cup sugar
t tsp baking powder
1 tsp salt
¾ cup milk
2 large eggs
⅓ cup melted butter
1 ½ cups bread crumbs (or coarsely crushed pork rinds)
- Preheat oven to 400* F. Grease an 8x8 baking pan.
- In a large bowl, stir together cornmeal, flour, sugar, baking powder, and salt. Set aside.
- In a large bowl, beat together milk, eggs, and butter. then add in the first mixture before stirring in bread crumbs.
- Pour into the prepared pan and bake for 25-30 min or until a toothpick inserted comes out clean.
